Raisin, cranberry and oat cookies

I love raisin & oat cookies. It is easy to make and tasty (even a week after), and they are healthier than other sugar cookies 🙂

I have made this many times, so I decided to make a twist of the recipe this time. I replaced the brown sugar with the dark muscovado sugar, also added some dried cranberries. It worked! The dark muscovado sugar made the cookies moister and softer. The tiny tartness of the cranberries balanced off the sweetness of the raisins.

Pineapple buns

A few months ago I went to a bread making class, since then I am fascinated with bread making, although I haven’t mastered it yet. The truth is it is simple but time consuming. It always challenges my patience.

This weekend I decided to make some pineapple buns. Pineapple bun actually doesn’t contain any pineapple, its name came from its look-alike pineapple skin topping. It is one of my favorite bun, especially when it is freshly baked. The recipe was given by a friend. She used a bread machine which made the process easier. I still prefer the traditional handmade bread, however today it is rainy and cold, the temperature did affect the bread rising. The buns were a little dense. I still liked them 🙂

Profiteroles filled with custard

I haven’t updated my blog for a while – lazy. 😛

Recently I have done a lot of cooking rather than baking, no mention cake decorating(no chance to practice)! I have tried some new recipes and they turned out great, however I am not doing well on the baking side (some time I wonder I should have a food blog rather than a cake decorating blog). Last weekend I baked my very first batch of Macarons. They turned out just an inch away from a disaster. I got the favor right but they had no foot, and collapsed. I didn’t even bother to take photos!

What to bake this weekend? There was some leftover custard in the fridge, so today I decided to make some profiteroles, which have brought my confidence back a little bit. It is easier than I thought, just see the photo (of course I only put the nice ones on the plate)! One step closer to make a croquembouche, which could be my next challenge, haha!

P.S. Although this is not about cake decorating, it is still my baking experiences.
